Winter Squash and White Bean Burrito with Creamy Guacamole

January 13, 2014 By Milen Gala

On a recent evening I found time to do something I hadn’t had time to do in months – flip on the television. To be more precise, I tuned into one of the more mainstream food channels. The show, “Man vs. Food” celebrated extreme eating and focused on the host sourcing and devouring, often with frightening (and nauseating) speed, the most fattening, calorie-dense, processed foods on the planet. If the producers’ goal was to demonstrate virtually everything wrong with our society’s relationship with food in less then thirty minutes, they did a fine job.

Sankalpa… Set Your New Year Intention

January 5, 2014 By Milen Gala

It’s time to get back to you, where all the good stuff lives…

I spent New Year’s eve in pajamas, in bed, with my 5 year old who caught a bug and spent the next 16 hours with a moderate fever, vomiting every twenty minutes. The following morning, as she slept, the sun poured in outside her room where I began my day by sitting in silence, setting my Sankalpa for the day and moving through a short practice, reconnecting with myself for the first time in over 12 hours. Afterwards I went down and had an avocado smoothie blended with fruit, kale and spinach… Later that day, around 10 pm I realized I made it through the entire next day, free of fatigue, with a calm mind, running on zero sleep and no caffeine, and yet felt fine.

New York is amazing, marvelous, breathtaking, extraordinary, wonderful in the winter time… especially between Thanksgiving and New Years. Manhatten glows all evening, and usually while I love being downtown, midtown simply does Christmastime better…

An Open Letter From Me to Those New to Yoga

November 18, 2013 By Milen Gala

“It is through your body that you realize you are a spark of divinity. Words cannot convey the value of yoga, it has to be experienced.” – BKS Iyengar

I had gotten to class a little early last night… Around me were several people I have been practicing with for years. The guy behind me could do all the arm balances. The girl next to me could hold dolphin plank for several minutes, and the older gentleman to my right spent half the time in child’s pose but always came and took from the practice what he could and what he needed.

Celeriac and Lentils With Hazelnut and Mint

November 5, 2013 By Milen Gala

DSC06318

This week when V and I are out riding we can feel the change in the air… As the weeks pass and the weather changes, we begin to experience the chilly Autumn days. As we ride past the tip of Lake Washington at Log Boom Park and onto the Burke Gilman Trail, smokey bonfire, apple tree and pine needle scents fill the air. And while outside we have campfires and s’mores, inside we crave delicious, wholesome and substantial dishes made on wood burning stoves with scents of roasted nuts, vanilla, pumpkin, nutmeg, mint, and sage.

Quinoa, Black Bean & Avocado Fiesta Bowl

Our local farmers’ market just ended for the year. Every Sunday Simi would hop on her scooter and we would walk on down to the park where our amazing farmers and vendors, our local restaurateurs, and our master gardeners all gathered to share a Sunday afternoon with us… There were childrens’ tables with crafts and healthy snacks, there were chefs doing demos based on cuisine from local eateries, and most importantly there were some AMAZING food trucks we salivated over while waiting in line for lunch.

How to Avoid Getting the Flu

October 16, 2013 By Milen Gala

flu-season

What if science evolved to the point where it became possible to be almost completely resistant to colds, influenza, and other illnesses? And what if I told you that if you did happen to catch these viral bad boys you will be able to bounce back to wellness within twenty-four hours?  Well, it’s cold and flu season and contrary to popular belief, resistance via a super-powered immune system is well within our reach. All we need to know is that as we fill every cell receptor with the right ingredients and meet the demands of our tissues, organs and systems, the body’s defenses take on superhero qualities, and this power keeps us healthy from head to toe.

Pasta with Roasted Broccoli Rabe, Harissa & Mint

September 27, 2013 By Milen Gala

All too often, we look askance at yet another pasta recipe.  Typically, because your average online pasta recipe is an attractive, visually appealing, tapestry of color but ultimately, a mildly disappointing, somewhat mediocre and insipid plate.  Well, this is a dish that may change your mind when it comes to the perception of pasta recipes.
