Berry Beet Breakfast Smoothie Bowl

For the the smoothie:
  • 2 cups frozen strawberries
  • 1 cup frozen banana
  • 1 cup fresh blueberries
  • ½ cup fresh cherries
  • ½ cup chopped raw beets
  • ½ cup gluten free oats, soaked in boiling hot water for 10 minutes, then drained.
For the toppings:
  • 1 cup of your favorite granola
  • 1 peach, sliced
  • 1 cup fresh blueberries
  • ½ cup sweetened shredded coconut
  1. In your blender, add the cherries and blueberries. Blend on low for a minute until smooth.
  2. Next add in the strawberries and banana. Blend again.
  3. Finally add the beets, and oats. Start to blend on low and then slowly turn up the speed. Blend until smooth. (Note: you may have to add a little water if your blender can't keep up)
  4. Pour into bowls and top each with the granola, sliced peach, fresh blueberries, and the shredded coconut.
