So, let me introduce you to the blueberry.
Okay, obviously the blueberry needs no introduction. It’s a superfood that we’ve been eating of years and it’s still one of the easiest, freshest, most nutricious, and most affordable superfoods we can get our hand on.
Blueberries contain the highest antioxidant capacity of all commonly consumed fruits and vegetables. Rich in flavonoids (that act as chemical messengers, physiological regulators, and cell cycle inhibitors) blueberries can literally reduce DNA damage to help protect against all things from aging to cancer, lowering cholesterol and preventing heart disease, and maintaining brain function.
So when paying $12 for that Acai packet starts to get old, I implore you to go back to your roots. And go back to the berries we all grew up on. Strawberries, blackberries, raspberries, blueberries and the like can throw a powerful nutritional punch just as strong as the super trendy imported South American Acai or Pitaya.
This smoothie can be blended up in 2 minutes flat and can be sipped on as you go about your day or poured into a bowl to make the base for an amazingly decadent smoothie bowl. Topped with fresh bananas, more berries, almonds, chia, pepita seeds and the like, this is one breakfast you’ll want to serve at your next brunch party, because trust me people will be asking for the recipe.
As I read more and more about the health promoting properties of these richly colored fruits and vegetables I’m really starting to experiment with blending, chopping, steaming, sautéing up some of these beauties myself.
I’ve learned that consuming these bioactive plant pigments have unique and profound health effects. And each color brings on a different benefit. So I say eat every as varied as you can get. Red peppers, oranges, kale and the like. Every fruit and veggie is worth eating. And it’s really so easy to make it tasty and delicious…
So, drink up your blueberries my friends…..
- 1 cup fresh blueberries
- 1 cup coconut yogurt
- 1 teaspoon honey (optional)
- ½ cup ice
- Place all ingredients in a high speed blender (blueberries, then yogurt, honey, then ice) and blend until creamy
- Pour into a glass and drink up or into a bowl and top with your favorites (banana, more berries, almonds, chia, pumpkin seeds) and spoon up.
