It’s the middle of February, and I know what you’re thinking…
VACATION!
It’s finally that time. We’re tired of the cold, rain, and gray and our bodies are screaming out for some sunshine, and trying to improve our low vitamin D levels… OK, the last one is undiagnosed, but come on, we live in Seattle. The sun shines here for 3 hours a day and when it does we all run out to greet it like that episode in “Portlandia” where the whole town follows each other around fighting for that little ray of goodness.
We’re usually off to Mexico this time of year, but this time we’re skipping the trip given our 3 week long, super fun, and kinda expensive trip around the world last month, so as an alternate plan we decided going to my sister-in-law’s in Houston should suffice. We’re leaving tomorrow, but the problem is, last week it was 70 there, this week, 45 and raining…
So if we couldn’t get to that tropical destination, I thought, hey, why not just try and bring it to us!
I made this smoothie completely on a whim with whatever ingredients we happen to have in the house. My vision was to make it taste like a mildly sweet pina colada so we could sit out on the deck between 2 and 3 pm and soak up that little bit of Seattle sunshine. It turned out so good that my kids could not stop drinking it… 3 batches later I decided I had to post it so you can try it!

5 ingredients, and no prep time make this smoothie really easy to make. There is no chopping required, just throw everything into the blender and enjoy this refreshing drink on or off the beach!
- 1 cup chopped frozen mangoes
- 1 cup chopped frozen pineapple
- 2 large handfuls of baby spinach
- 2 cups water
- 2 tbsp. shredded coconut
- Blend all ingredients in a high speed blender (my favorite is the Vitamix) and enjoy!
